I've been sending crew to the gym but I can't really tell exactly how it's helping. Will they only benefit from one session or are multiple sessions beneficial? For example, multiple yoga sessions. Thanks for your input!

Grok The effects of the gym are cumulative, so the more they exercise, the bigger the effects. You can see the possible effects of exercise in the gym stats. Not all exercises provide the same benefits, since all distribute the gains among different values. You can tailor the exercise regiment to promote some specific qualities (HP, attack, ability or stamina) or just do a basic general training. For instance my Xin has a 56 ability instead of the stock 50. There might be other skill improvements in the future. Depending on the character (currently basically the rarity) determines the possible total points you get to exercise, see here.You can also tailor the regiment for the task. For instance if you are trying to improve Roach for holding boarder, you would raise the HP, ability and maybe the attack. Ron as a general guard, you would work on raising the HP (at least to 10), stamina and maybe attack.

I guess my confusion is that I am not always seeing any change. For example, sometimes the stamina goes up, some times it doesn't.

Grok, make sure your crew isn't too tired (frown face), or the results from the gym will decrease. Even get the impression, that you might only get stamina out of the session. The results from the gym are random, with max being what is shown on the gym values page. The more fatigued they are, the less likely you will get a good result.
Not sure, just an idea that to get positive results, you might have to alternate the exercises. If you train them in the same routine, you might not get what you expect. Also the more possible point, the higher chance that they'll get something out of it. However, I had crew that got nothing after a long session, because they were tired to begin with.

Good info, I didn't know it was random. Where do see the frowning face? On the actual crew image? Or the training icons?

If you click on a crew after training, you will see a face showing how tired he is. There are three levels of fatigue that are shown by this face

ftr;, if you are training a character like squid, i believe you should rotate through the three levels of health training to maximize his potential...
